Frozen Rainbow Yogurt Tubes

No matter the age, what kids want to eat and what parents want kids to eat are not always one and the same. Add in the need for convenient foods your family can grab and eat on the go, and you’re in perpetual puzzle-solving mode. This is where stocking the fridge and freezer with nutritious yet delicious foods comes in. And also why we’re sharing our twist on homemade yogurt tubes with you (recipe previously posted on Clover Sonoma in collaboration with Lindsay at The Toasted Pine Nut!)

For this Frozen Rainbow Yogurt Tubes recipe, our not-so-secret ingredient is Clover the Rainbow organic smoothies. Kids will love the taste of the real fruits and veggies, and you’ll love that they’re getting the nutrition they need, including billions of probiotics, 8 grams of protein, and essential vitamins and minerals like calcium (with no artificial flavors or sweeteners!) And getting the kids involved in making these yogurt tubes creates the perfect opportunity to teach how eating all the colors of the rainbow is an essential part of a healthy, balanced diet.   • 1 ½ cup Clover the Rainbow Smoothie (choose from Strawberry Banana Butternut, Blueberry Beet or Strawberry Carrot)
  • 1 cup frozen mixed berries
  • 1/2 cup frozen cauliflower rice
  • 2 tablespoons agave nectar
  • 1/2 teaspoon vanilla
  • pinch of salt
  • Popsicle mold bags/tubes
  • 1Add all the ingredients into your blender and blend on high until you have a nice, smooth and creamy texture.
  • 2Use a small spoon or funnel to add the smoothie mixture into the tubes, filling it to the “fill line,” as when you freeze them, they’ll need a little room to expand.
  • 3Tightly close the zipper the yogurt tubes and store in the fridge or freezer until you’re ready to grab and go!
