Gooey Golden Grilled Cheese

Let’s talk about grilled cheese. How can a sandwich so simple deliver such a satisfying taste and texture? That buttery-golden crunch on the outside. The out-of-this-world gooeyness inside. That said, there’s an art to making the perfect grilled cheese. And today we would like to pass that knowledge along to you.

First, quality ingredients make all the difference. We use Clover Organic Farms Shredded Three Cheese Mexican Blend and a mix of gourmet Cheddar, Monterey Jack and Pepper Jack cheeses. We also use Clover Salted Butter, and fresh slices of sprouted whole grain bread from our local friends at Alvarado Street Bakery in Petaluma. And don’t forget the mayo or dijon mustard.

  • 1Top one slice of bread with a smear of mayonnaise, and spread a little Dijon mustard on the other slice. Note: this is optional but helps the cheese stick to the bread.
  • 2Sprinkle a generous handful of cheese over the mayo, and top with the other slice (mustard side down). Finish by spreading softened Clover Salted Butter on top of the sandwich.
  • 3Lay the sandwich, buttered side down, in a warm skillet over medium heat. Butter the remaining top side of the sandwich, and grill about (2) minutes or until the bread is toasty and golden brown. Gently turn the sandwich over and continue grilling until the cheese is melted and both sides are crisp.
  • 4Remove from the pan to a plate and let cool for (1) minute before cutting. Serve with fresh fruit and an ice cold glass of Clover Organic Milk for smiles all around!
